What Makes a Great Light String Cheese?
String cheese is one of those foods that is almost universally loved—and with almost the same rich taste, and fewer calories and less guilt—the light variety makes it so easy to indulge.
The appearance of high-quality light mozzarella string cheese will vary, but should generally have a color that ranges from a natural yellow tone to a creamy off-white.
Great string cheese has a mild aroma that offers some cultured dairy and aged cheese notes.
The first thing you’ll taste in good string cheeses is saltiness, though it won’t be very pronounced. There will also be a slight sourness and sweetness. Similar to the aroma, the taste of quality light mozzarella string cheese should be moderate, and have the same fresh dairy notes.
