What Makes a Great Wide Egg Noodle?

Nothing makes a quintessential casserole quite like quality egg noodles, but don’t let that limit your creativity. Other savory favorites like chicken noodle soup and beef Stroganoff can benefit from the right brand.

You can tell a lot about an egg noodle by its appearance. A high-quality noodle will have an appetizing golden color, with a uniform size and width; usually about a half-inch wide. The noodles should be mostly in tact, with a minimal amount of broken fragments.

Good egg noodles don’t have much of an aroma, but what you can detect should smell of fresh grain and eggs.

Sweetness is the fundamental taste of great egg noodles. There should be a discernible natural egg flavor, followed closely by a grain flavor, though both should be mild.

Texture is an important aspect of good egg noodles. The noodles should have a slight pop to them, without being soft or al dente. Some starchiness is to be expected, but quality egg noodles will have a clean finish and short dissolve.

We know what makes a great egg noodle, but what makes a bad one?

Good egg noodles are never soggy in texture, and won’t lose their taste when paired with sauce. There should be a minimum of broken noodles; avoid brands that contain an abundance of shredded or partial pasta. Artificial aromas are also a sign to avoid, the smell of powdered egg is an indication of second-rate ingredients.
