Our judges looked for feta that had a mild aroma with a moderate complexity to it. You should smell milk, subtle fermentation, lactic tang, and earthy notes.

The best feta cheeses have a moderate saltiness, as well as a slightly less intense natural sweetness to them. Feta cheese crumbles should have a moderate sourness, and may even present the slightest hint of bitterness.

The aroma of a great feta will carry through to the flavor, delivering sweet dairy, milk, and grassy elements. You should be able to taste the freshness of the cheese.

High-quality feta has a creamy texture that dissolves relatively quickly in the mouth, with a clean, almost dry finish.

We judged the feta cheese crumbles by serving them over a basic salad with red wine vinaigrette to see which brands complemented both the flavors and textures of the lettuce and dressing.

We know what makes great feta, but what makes a bad one?

The worst feta we tested smelled like ammonia, while another tasted like cardboard packaging. Other things to watch out for include overly salty brands, overall bland taste, and flavors that get lost when pairing with other foods.
