How to Choose the Best
In the United States, cream is sold under a variety of names—half and half, whipping cream, heavy whipping cream—all of which indicate the percentage of milk fat. At 11-18%, the fat content of half and half is far lower than that of heavy whipping cream at 36%. Individual recipes usually specify the type of cream to use.
Shelf Life and Storage
Cream should have an expiration date listed on the packaging. Like other dairy products, the aroma of cream can be used to evaluate its freshness—a sour aroma usually indicates spoilage. Most dairy products can be used for seven to ten days after the expiration date if they are properly stored.
Freezing


Cream can be frozen for up to two months. Defrosted cream will separate slightly and cannot be whipped. So use it for cooking or baking.
Preparation Suggestions
Cream is an essential ingredient in many pastry and dessert recipes. It is whisked for whipped cream and folded into mousses. Cream adds luscious mouthfeel to dessert sauces, candies, custards and ice cream. It is also used to thicken savory sauces, soups or simply poured into morning coffee.
