What Makes a Great Cinnamon Raisin Bread?

Served with cream cheese, sweet butter or your favorite jam, cinnamon bread is a superb breakfast bread. Try a few toasted slices with your next bowl of oatmeal, or use it for a bold batch of French toast. You can even sprinkle sugar on toasted and buttered cinnamon bread for instant cinnamon toast.

Our chefs define high quality cinnamon bread as having plump and tender raisins with a cinnamon coloration either throughout the slice or patterned in a swirl. In addition, the bread should have uniform crumb distribution, not unlike French sandwich bread.

Look for a moderate to high level of cinnamon aroma intensity, with raisin and bread aromas following at less than half the level of cinnamon. Naturally, there should be no off notes stemming from packaging or processing.

Cinnamon bread is in taste balance when moderate sweetness is the predominant basic taste; low intensities of saltiness, sourness and bitterness should follow.

A combination of cinnamon, raisin and bread flavors should create an ideal flavor balance. Moderate to high cinnamon will be the most evident flavor, followed by a slightly lower flavors of raisin and bread flavor. The bread character should have some complexity, delivering notes of toastiness, raisins, cinnamon and fresh yeast. The complex cinnamon character should deliver a high quality cinnamon flavor that features earthy, naturally sweet and floral notes without being harsh.

When chewed, cinnamon bread slices should be moist and tender, not tough when bitten into. The bread should dissolve at a moderate rate without balling up while being chewed, with the raisins' dissolve lasting a bit longer than that of the bread. The bread’s density should fall between that of pumpernickel and ciabatta.

When paired with butter or other spreads, the bread should complement the topping without being overpowered by it.
