1 (15-ounce) can black-eyed peas, drained
1/2 cup cucumber, peeled, seeded and diced
1/2 cup diced red onions
1/4 cup thinly sliced scallions
2 tablespoons finely chopped parsley
1/2 teaspoon finely chopped garlic
To taste salt and pepper
1/4 cup cider vinegar Bragg 
1/4 cup extra virgin olive oil Colavita 

Steps

  1. Mix all ingredients together in a large bowl and chill well before serving.

Serve this tasty and healthy salad with fried chicken and fresh sliced tomatoes for a Southern summertime treat.
